Paleo, Wheat Free, Sugar Free, Low Carb Strawberry Italian Ice

Another quick and inspired recipe from a favorite chef of mine, Rocco DiSpirito. I saw this made on the Rachael Ray Show last week and knew I had to try to make it a little less carby. The results were all kinds of delicious! The flavor of this delicious treat reminds me of the strawberry Julius smoothies that they sell at Orange Julius. Best yet– one serving is low cal and low carb, so it makes a really tempting dessert that feels like cheating: but it’s not.

Strawberry Italian Ice (Paleo, Wheat free, sugar free, low carb)



Ingredients:

  • 2 cups frozen sliced strawberries (do not thaw)
  • 1 T water
  • 1 1/2 T lemon juice
  • 12 drops liquid stevia extract (or 3 T granulated erythritol)
  • 1/4 tsp. xanthan gum
Directions:
 
Place all ingredients in a food processor or blender and pulse for several minutes, using a spoon to stir around the mixture if necessary. You may have to pulse several times because the mixture gets very thick. Once smooth, scoop into serving bowls. If desired, garnish with a little balsamic vinegar and a mint leaf. Serves two.
Nutrition: (In one half recipe): 40 calories, 6 net carbs (11 total carbs, minus 5g fiber = 6 net carbs)
