Another quick and inspired recipe from a favorite chef of mine, Rocco DiSpirito. I saw this made on the Rachael Ray Show last week and knew I had to try to make it a little less carby. The results were all kinds of delicious! The flavor of this delicious treat reminds me of the strawberry Julius smoothies that they sell at Orange Julius. Best yet– one serving is low cal and low carb, so it makes a really tempting dessert that feels like cheating: but it’s not.
Strawberry Italian Ice (Paleo, Wheat free, sugar free, low carb)
- 2 cups frozen sliced strawberries (do not thaw)
- 1 T water
- 1 1/2 T lemon juice
- 12 drops liquid stevia extract (or 3 T granulated erythritol)
- 1/4 tsp. xanthan gum
