Savory Bacon Cheddar Cookies

Savory cookies? Sure, why not?

These delicious bacon cheddar cookies are perfect for breakfast, lunch or snacking. With just .5 g of net carbs apiece, these make a delicious and convenient way to calm cravings. Yum!

This recipe contains no added salt. The added bacon, bacon fat and cheddar cheese provides enough salt for the recipe. The balance of flavors–the garlic, the cheddar, the onion and garlic– are truly delicious. Even better, even your carb-loving family members and friends will fall in love with these “cookies.”

Savory Bacon Cheddar Cookies

  • 2/3 C almond flour
  • 1 T coconut flour
  • 1 T arrowroot powder
  • 5 T butter, melted (preferably grass-fed; I use Kerrygold)
  • 2 eggs, slightly beaten
  • 5 strips of organic, uncured bacon, cooked crisp and chopped (reserve 2 T of bacon fat)
  • 1/2 C shredded sharp cheddar cheese
  • 1/4 tsp. baking powder
  • 1/4 tsp. garlic powder
  • 1/8 tsp. black pepper
  • 1/4 tsp. dried parsley
  • 1/4 tsp. onion flakes
1. Preheat oven to 350 degrees and lightly grease a large cookie sheet.
2. In a large bowl, beat together the eggs, butter, bacon fat, garlic powder, pepper, baking powder and parsley until just blended.
3. Add in almond flour, coconut flour and arrowroot powder and mix by hand until a thick dough is achieved.
4. Add in bacon crumbles and cheese and mix by hand until well incorporated.
5. Drop dough by the heaping teaspoon onto greased cookie sheets about an inch apart. Bake on the middle rack for about 10-12 minutes or until the edges of the cookies begin to ever so slightly brown.
6. Remove from cookie sheet and allow to cool for just a minute. Serve warm or room temperature. Store at room temperature for up to two days.
Makes about 20 cookies.

Eating healthy, for me, is about more than weight loss like it used to be. It’s about controlling my blood sugar levels and obtaining normal–or relatively normal–hormone levels. I still struggle to lose weight efficiently, but eating a wheat, sugar and gluten free diet helps to control some of the problems I’ve encountered with these health issues of mine.
