Orange Chocolate Shortbread Cookies

Easy peasy cookies to please even the pickiest eaters? Yes, please! Use your favorite sweetener and enjoy. These tasty sweets are a real crowd pleaser!

Orange Chocolate Shortbread Cookies


Makes 12 cookies.


  • 1 C almond flour, sifted
  • 2 T coconut flour, sifted
  • 1/2 C sweetener (I used Swerve)
  • 1 stick butter, softened
  • 1 egg yolk
  • 1-2 T water
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. orange extract
  • 1/3 C sugar free chocolate chips


  1. In a large bowl, combine butter, sweetener, salt, orange and vanilla extracts and cream together until smooth.
  2. Add in egg yolk and beat again.
  3. Add in almond and coconut flours and beat until the dough is thick but smooth.
  4. If necessary, add one tablespoon of water to make the dough workable (add another if necessary).
  5. Weap the dough in some Saran wrap and roll it into a log that’s about 2 inches in diameter.
  6. Refrigerate the wrapped dough log for 3-4 hours until firm.
  7. Heat the oven to 350 degrees, and while you’re waiting for it to pre-heat, slice the cookies into 1/3 inch-thick disks and place on a lined baking sheet 1/2 inch apart (you should get about 12 cookies).
  8. Bake on the middle rack for 12-15 minutes or until the cookies are barely golden and firm.
  9. Allow cookies to cool on the cookie sheet for about 15 minutes before attempting to move them to allow them to firm up. Next, move them to a cooling rack with paper towels beneath it.
  10. In a plastic sandwich bag, place all the chocolate chips. Secure the bag closed tightly.
  11. Microwave the chocolate chips in the bag on high for 25 seconds, then remove it and squish the chocolate in the bag to assist it further in melting. Continue to microwave in 10 second intervals to completely melt the chocolate. Be careful not to burn yourself or burn the chocolate!
  12. Cut a teeny, tiny hole in one corner of the bag and drizzle the chocolate over the baked cookies. Allow the chocolate to harden for about 45 minutes, then enjoy the cookies.
