One Minute Banana Nut Micro Cake (Muffin in a Minute)

Super fast post, folks– but I just had to share! My young daughter requested banana bread today. I had a long day at work, so I didn’t want to throw a whole batch together. Instead I put together this small treat in the microwave, which took only about a minute to cook!

 

If you love banana nut bread, you’ll really get that flavor here. And this whole little cake will only set you back 2.5 g net carbs too. 🙂

One Minute Banana Nut Micro Cake (Muffin in a Minute)

Ingredients

  • 2 T almond flour
  • 1 T coconut flour
  • 1 T whey protein powder
  • 1 egg
  • 2 T sweetener (I used Swerve)
  • 1 T coconut oil (melted) or avocado oil
  • 1 tsp. banana extract
  • 1/4 tsp. vanilla extract
  • Pinch of salt
  • 1/2 tsp. baking powder
  • Dash of cinnamon
  • 1 tsp. crushed pecans or walnuts

Instructions

  1. In a medium bowl, whisk together almond flour, coconut flour, protein powder, sweetener, salt, cinnamon and baking powder.
  2. Add in egg, oil, banana and vanilla extracts.
  3. Stir well until no lumps remain.
  4. Add in crushed nuts and stir again.
  5. Grease a small bowl well and pour the batter in the bowl.
  6. Microwave bowl in the center of the microwave on high for 60 seconds or until the center of the cake is just firm to the touch (don't overcook!) If it's not done after 60 seconds, microwave an additional 10 seconds until ready.
  7. Carefully invert the cake onto a plate or cooling rack. Enjoy!
