Sweet & Tangy Broccoli Salad

If you’ve never been to a Ruby Tuesday, you’re missing out. For a chain restaurant, they have great food. One of my favorite parts of the restaurant is their salad bar, which features an awesome broccoli salad that’s got this awesome sweet, tangy flavor and it’s peppered with cheddar cheese, bacon and onion. Unfortunately, their version is loaded with sugar. Lucky for you, my version is not!

This raw broccoli salad will please everyone. The combination of textures is awesome– crispy broccoli, creamy cheese and crunchy bacon and onions make this simple salad one that is really tantalizing to the senses.

 

The dressing for this salad is so super simple it’ll befuddle you. It’s similar to slaw dressing, but without the spices. It’s got this sweet tang that’s just fabulous. Oh, and of course, it’s low carb.

Sweet & Tangy Broccoli Salad

Makes 4 servings. 3g net carbs per serving.

Ingredients

  • 1 head fresh broccoli, cut into bite sized florets
  • 3 T finely diced red onions
  • 1/4 C real bacon bits or finely chopped bacon
  • 1/3 C shredded cheddar cheese
  • 1/3 C mayonnaise
  • 3 T apple cider vinegar
  • 1 T water
  • 1/4 C sweetener (I used Xylitol)
  • 1/4 tsp. salt

Instructions

  1. In a large bowl, stir together the apple cider vinegar, water, sweetener and salt and stir until the sweetener is completely dissolved.
  2. Whisk in the mayonnaise until the mixture is smooth.
  3. Toss in the broccoli, onions, bacon and cheese and stir until everything is evenly dispersed and coated well.
  4. Refrigerate for at least an hour to allow the vegetables to soak up some of the flavor. Stir well before serving.
