Spiced Candied Bacon

After talking with a friend of mine about a new offering at Honey Baked Ham (honey baked bacon, anyone?), we were talking about the deliciousness that is candied bacon. I’ve always liked Honey Baked ham; with its spicy sweetness–but the thought of doing it with bacon is extra delicious sounding. Of course, the results were amazing!

It wasn’t a recipe without a little bit of disaster, though. This was actually the results of the first batch I tried to make:

Yeah…that’s not beef jerky there. That bacon got burnt while I watched the end of a good movie. It really wasn’t in the oven long; maybe 30 minutes? Lesson learned: candied bacon burns much faster than regular bacon in the oven. Case in point? Watch. Your. Bacon. Closely.

Spiced Candied Bacon

Less than one gram of net carbs per two slices.

Ingredients

  • 1 lb. thick sliced bacon
  • 1 C granulated sweetener (I use Swerve) *
  • 1 tsp. blackstrap molasses *
  • 1 tsp. ground cinnamon
  • 1/8 tsp. ground cloves
  • 1/2 tsp. ground nutmeg
  • *A brown sugar substitute such as Ideal Brown can be substituted for these ingredients.

Instructions

  1. Heat oven to 375 degrees and line a cookie sheet or jelly roll pan with parchment paper or a Silpat silicon liner.
  2. Combine sweetener, molasses, cinnamon, cloves and nutmeg in a food processor. Process until smooth and mixed well. Transfer to a large bowl.
  3. "Bread" each slice of bacon, front and back, in the sweetener mixture, then place onto the baking sheet.
  4. Bake for 15 minutes or until crisp but not burnt. Cool on a cooling rack and then enjoy.
