Cakes take so long to make. They’re a real labor of love, you know? So what’s a girl to do when she’s craving chocolate but doesn’t want to spend a couple of hours in the kitchen? Why, she whips up a tasty mug cake, of course.

I make my mug cakes in these nifty little cake dishes I picked up from Old Time Pottery a few years ago. They’re perfect!

I decided to go with a chocolate and coffee combo for this low carb cake. After all, that combination ranks up there with chocolate and peanut butter. Or mint and chocolate. I mean seriously, coffee and chocolate? Yes. Yes… please.

Single Serve Chocolate Espresso Mug Cake with Mocha Creme

Ingredients

    Cake Ingredients
  • 3 T almond flour
  • 1 1/2 T whey protein powder (I use Jay Robb)
  • 1/2 T coconut flour
  • 1 T unsweetened cocoa powder
  • 5-10 drops stevia extract or EZ-Sweetz sucralose (to taste)
  • 1 1/2 T melted coconut oil
  • 1 large egg white (or small whole egg)
  • 1 1/2 T full fat sour cream or Greek yogurt
  • 1/2 tsp. instant coffee
  • 1 T warm water
  • 1/4 tsp. baking powder
  • 1/8 tsp. xanthan gum (optional)
  • Mocha Creme Ingredients:
  • 1 oz. full fat cream cheese
  • 2 T heavy cream, whipped stiffly
  • 1 tsp. unsweetened cocoa powder
  • 5-10 drops stevia extract or E-Z Sweetz liquid sucralose  (to taste)
  • 1/2 T water
  • 1/4 tsp. instant coffee
  • 1 T (FOR CAKE) or 1/2 T (FOR CREME) BREWED ESPRESSO MAY BE SUBSTITUTED FOR WATER AND INSTANT COFFEE IN THIS RECIPE.

Instructions

  1. Prepare a mug or mini cake dish (see pictures) by greasing its bottom and sides.
  2. Mix together almond flour, whey protein, coconut flour, cocoa powder, baking powder and xanthan gum until well mixed.
  3. Add in melted coconut oil, egg and sour cream and whisk well until smooth.
  4. In a tiny bowl, stir together instant coffee and water until dissolved. Pour into cake mix and stir well.
  5. Place batter into greased mug or small cake dish until it's just under half full.
  6. Microwave on high in the center of the microwave for approximately one minute. The cake will be done when it feels firm but not hard throughout. Microwave times vary, so watch the cake closely as it cooks.
  7. Allow to cook for a few minutes, then top with mocha creme (recipe follows) and sugar free chocolate chips if desired. Enjoy!
  8. To make mocha creme:
  9. Beat together cream cheese and whipped cream, then add sweetener.
  10. Add in cocoa powder.
  11. In a tiny bowl, mix together the instant coffee and water and pour into the cream mixture.
  12. Beat until fluffy. Pipe or spoon onto finished cake.

Notes

Makes one very generous (and even sharable!) serving. 8g total carbs, 3g fiber. 5 g net carbs.
