Story Time…
I brought the grill out of our shed. I also replaced the snowblower in our garage with the lawnmower and put the snowblower in the shed. The seasons are changing, and with highs in the high 50s and 60s this in the ten day, I’m hoping it’s safe to say that spring is finally upon us after one of the most brutal winters I can remember.


This grilled stuffed chicken cordon bleu with honey mustard sauce was my first real venture on our grill. The recipe is simple and the taste is amazing. Unfortunately, our grill was damaged when I pulled it out, and we had to put temporary fixes in place. I think we’ll probably be in the market for a new grill this year. I think it’s time we splurged on a good grill instead of going for the value models like we’ve been used to doing for years.


This recipe features flavor rich gruyere cheese (it’s amazing), but you could easily sub out sliced Swiss cheese instead if you can’t find good gruyere. The homemade honey mustard really makes a great difference, too. It’s sweet and tangy and absolutely delicious. Enjoy!

Stuffed Chicken Cordon Bleu Rolls with Honey Mustard Sauce


Stuffed Chicken Cordon Bleu Rolls with Honey Mustard Sauce

Makes three servings. 2g carbs per serving.


  • 3 boneless, skinless chicken breasts, pounded very thin
  • 3 oz. (3 slices) gruyere or Swiss cheese
  • 6 thin slices of black forest or Virginia ham (no honey or sweet ham varieties)
  • 3 T mayonnaise
  • 1 T yellow mustard
  • 4-5 drops stevia extract or EZ-Sweetz
  • Dash of garlic powder
  • 1/2 tsp. dried basil
  • Salt & pepper


  1. In a small bowl, whisk together mayonnaise, mustard, stevia and garlic powder until smooth to make honey mustard sauce. Set aside for a moment.
  2. Spread a tablespoon of honey mustard sauce onto each thin piece of chicken.
  3. Top sauce off with two slices of ham and one ounce (or slice) of cheese.
  4. Carefully roll the chicken, keeping the ham and cheese inside the roll as best as possible. Secure with a tooth pick.
  5. Season the outsides of each chicken roll with salt, pepper and basil.
  6. Grill chicken rolls on a medium setting on your grill for 10-12 minutes per side. Check for doneness.
  7. Let chicken rolls stand 3-5 minutes before serving. Top with a little more honey mustard, if desired.
