Eating healthy, for me, is about more than weight loss like it used to be. It’s about controlling my blood sugar levels and obtaining normal–or relatively normal–hormone levels. I still struggle to lose weight efficiently, but eating a wheat, sugar and gluten free diet helps to control some of the problems I’ve encountered with these health issues of mine.

Swiss Meringue Buttercream

By Leeann Teagno / November 19, 2012

Cake might just very well be my favorite food on the planet–or at least it was. This Swiss meringue buttercream is the next best thing to traditional Swiss meringue buttercream. The frosting is almost identical to its sugar-laden counterpart. As a baker, I’m quite familiar with frosting. Swiss buttercream is unlike what you’d get at […]

By Leeann Teagno / November 18, 2012

Ahh, it’s officially the holiday season! Quick post today to give you all the recipe for this absolutely fabulous crustless pumpkin cheesecake. It’s so super easy and so super tasty you’ll do a backflip– or at least your taste buds will! You’ll need a springform pan to make this correctly, but you could probably do […]

Your Next Meal: Pork Loin, Brussels Sprouts and Pumpkin Puree

By Leeann Teagno / November 17, 2012

I figured I’d start a new “segment” for the blog which I’m titling “Your Next Meal.” Why? Well, because after you look at it and drool for a moment, it’s sure to have you rushing out to the supermarket to pick up the necessary ingredients. This segment? Roasted pork loin with rosemary, lemon and garlic; […]

Grain Free, Gluten Free, Sugar Free Luscious Lemon Cookies

By Leeann Teagno / November 14, 2012

Another quick post just before I hit the hay. 🙂 These grain free, sugar free, gluten free lemon cookies are not super sweet and are just perfect for a healthy, refreshing snack when you’re craving something just a little sweet. I originally wanted to concoct some type of glaze to go over these, but I […]

Gluten Free, Low Carb Ginger Snaps

By Leeann Teagno / November 13, 2012

A super quick post today– I made these yummy ginger snaps on a whim with some of the leftover dough from the frosted sugar cookies I posted yesterday. With the addition of just a few spices and a tiny little bit of molasses (a teaspoon for the whole batch, required mostly for color, you can […]

Primal, Sugar Free, Low Carb, Gluten Free Iced Sugar Cookies

By Leeann Teagno / November 11, 2012

In my quest to make the holidays a bit easier for low carbers, a good sugar cookie alternative was necessary. Biting into a crisp-yet-chewy iced cookie in the shape of a tree, a star or a snowflake is the perfect ending to a holiday dinner complete with turkey, mashed cauliflower and lots of veggies. These […]

Easy Peasy Fluffy Pancakes

By Leeann Teagno / October 29, 2012

Ahh, the incredible edible egg. For those watching their carbs, eggs become a breakfast staple. While I love eggs (and I really do), sometimes I just want something a little different for breakfast. Try these delicious pancakes with my homemade easy peasy maple syrup. Before I went mostly gluten free, I made pancakes with the […]

Chewy Peanut Butter Cookies

By Leeann Teagno / October 28, 2012

Two blog posts in one day? Whoa. When this happens, you know it’s good. Let me start by saying this: achieving a chewy low carb cookie is an elusive task. Caky cookies, caky cake, caky brownies–those are simple. Chewy ones, however, are difficult. These peanut butter cookies achieve a delicious, chewy texture that I thought […]

Zucchini Lasagna Bake for Two. It’s what’s for dinner.

By Leeann Teagno / October 27, 2012

It’s hard to go wrong when you combine three kinds of cheese into your dinner. This easy zucchini “pasta” dish puts an emphasis on the savory flavors of sausage, cheese and tomato with hints of garlic and basil. In a word, it’s amazing. All you need is a zucchini and a mandolin or a vegetable […]

Chocolate Cake! (Low Carb)

By Leeann Teagno / October 21, 2012

Next up on my sugar and wheat free adventure was a household staple: chocolate cake. Chocolate is quite good for you on its own: it’s full of antioxidants and fiber. Once you add in all that flour and sugar, though, it becomes a nutritional nightmare. This cake was made with almond and coconut flours with […]
