Cheesy Pepperoni Pizza Biscuits


Mmm! These easy, tasty biscuits pack all the flavor of pepperoni pizza and garlic bread in one, convenient, delicious roll. The outside is crisp and the inside is beautifully tender and jam packed with the flavors of spicy pepperoni, garlic, basil, mozzarella cheese, oregano and marinara sauce.

Seriously, guys– these tasty biscuits pack a ton of flavor. Feel free to dip them in more marinara or just enjoy them as is. They make the perfect snack and the whole family will love them. Oh, and did I mention they have just 2g net carbs apiece?
If you prefer, you can roll the dough out into a sheet between plastic wrap sheet until it’s about 3/4 inch thick and use a circle biscuit cutter to get a more refined look. Me? I just flattened little balls of dough by hand. Easy peasy.

Cheesy Pepperoni Pizza Biscuits


Makes 12 biscuits. 2g net carbs per biscuit.


  • 1 C almond flour
  • 1/4 C oat fiber (for grain free, use 1/4 C additional almond flour)
  • 1 T coconut flour
  • 1 C shredded mozzarella cheese
  • 4 oz. sliced pepperoni
  • 1/2 C melted butter (one stick)
  • 2 eggs
  • 2 T pizza sauce
  • 1/2 tsp. garlic powder
  • 1/4 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried parsley
  • 1/4 tsp. salt
  • 1 tsp. xanthan gum (optional, but helps texture)
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda


  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together almond flour, coconut flour, oat fiber, spices, salt, xanthan gum, baking powder and baking soda.
  3. In a medium separate bowl, pour the pizza sauce, eggs, and melted butter into the dry ingredients and mix well with a mixer or spatula. Set aside.
  4. In a food processor, combine mozzarella and pepperoni slices and process until a mealy mixture is formed.
  5. Stir the pepperoni-cheese mixture into the batter by hand until well mixed. It'll be thick.
  6. Roll the dough into twelve 2 1/2 inch balls and place two inches apart on a cookie sheet, then flatten each one to about 3/4 inch thick.
  7. Bake on the middle rack for 20-25 minutes or until deep golden brown.
  8. Remove from oven and brush with melted butter, if desired.
  9. Cool on a cooling rack slightly, then enjoy.
