Crispy Naked Buffalo Chicken Bites


This is an easy recipe that’s perfect for when you want to head out for wings, but you just don’t have time. Everyone thinks you need to bread boneless “wings” in order to make them crispy, but I’m here to prove that’s not the case. See how simple it is to make “naked” boneless wings with just a few ingredients: and you probably already have them on hand.

Dip these tasty chicken bites in ranch or blue cheese dressing–whatever is your favorite. These are also absolutely delicious when served over a salad with greens, tomatoes, cheese, cucumbers and ranch or blue cheese dressing. They can also be eaten cold, so packing that very salad for lunch for your workday is a snap.
These buffalo chicken bites are naturally carb free and are great for parties or get togethers. Just set them out alongside with toothpicks and dressing for dipping and you’ll be good to go.

Crispy Naked Buffalo Chicken Bites


Makes three servings. 0 carbs per serving (not including dressing).


  • 3 raw boneless, skinless chicken breasts, cubed (about one pound)
  • 5 T butter
  • 1/4 C cayenne pepper sauce (like Frank's Red Hot)
  • Dash of garlic powder
  • Ranch or blue cheese dressing for dipping


  1. Melt the butter over medium heat in a large skillet.
  2. Add the chicken chunks and sprinkle lightly with garlic powder. Sautee the chicken, stirring frequently, for about 30 minutes, or until the chicken has turned a crisp, deep, golden brown color all over and no water remains in the skillet. This is key-- you'll see the outside of the chicken "caramelize" and get crispy all on its own without the need for breading.
  3. Reduce heat to low and pour in the hot sauce and stir well.
  4. Serve with a side of dressing for dipping.
