Simple Summer Spiraled Cucumber Salad


Sorry for the bad pictures. As it usually works out, I wasn’t planning on doing a recipe today. However, as simple as it might be, this cucumber salad totally deserves a spot. Why? Because it’s delicious, that’s why. Can’t you just taste it through the screen?


This whole salad takes about 10 minutes to throw together, and boy is it worth every second. It’s the epitome of summer, and of course, it’s low carb. It’s a wonderful alternative to pasta salad, so it’s great for picnics or family get-togethers.
I used this spiral slicer to make this. It’s the same thing you’ll use to make zucchini noodles (or zoodles, if you will). The Vegetti will also work great, but the spiral slicer makes it even easier. You can choose to use bottled Italian dressing instead of making your own dressing in this recipe.

Simple Summer Spiraled Cucumber Salad

Makes three servings. 2g net carbs per serving.


  • 1 seedless cucumber with the ends cut off
  • 1 medium tomato, seeded and finely diced
  • 1/4 of a small red onion, sliced paper thin
  • 1/3 C crumbled feta cheese
  • 2 T apple cider or white vinegar *
  • 2 T olive oil *
  • 1/4 tsp. dried basil *
  • 1/8 tsp. dried thyme *
  • 1 tsp. sweetener (optional; I used Swerve) *
  • Salt and pepper to taste *
  • ** Omit these ingredients if you want to use bottled Italian dressing. Use 3-4 T Italian dressing if you go the bottled route and choose a variety without added sugar.**


  1. Spiralize cucumber and place in a bowl. Slightly cut it up into smaller piece, if you like.
  2. Add in diced tomatoes, sliced onions, and feta cheese. Mix well.
  3. In a separate bowl, whisk together vinegar, oil, basil, thyme, sweetener, salt and pepper. Pour over salad and mix well (if using dressing, simply pour prepared dressing over the finished salad). Make sure the dressing coats everything in the salad.
  4. Serve.
