Fluffy Low Carb Chocolate Chip Pancakes


My daughter had been asking for chocolate chip pancakes for quite some time, so this recipe has been in the back of my head for months. I’m so glad that I finally got around to it!


These pancakes were inspired by the familiar cream cheese pancake recipe from I Breathe, I’m Hungry. I make those frequently, but have been wanting to build on them. I couldn’t have asked for these to turn out better. Look how yummy they look!


They came out light and fluffy, and the sugar free chocolate chips were to die for. I recommend using mini chocolate chips, as they tend to work a bit better in low carb chocolate chip pancakes.


Fluffy Low Carb Chocolate Chip Pancakes


Fluffy Low Carb Chocolate Chip Pancakes

Makes two servings. 4g net carbs per serving.


  • 2 eggs
  • 2 1/2 T cream cheese
  • 1 tsp. vanilla extract
  • 1/4 tsp. baking powder
  • 3-5 drops stevia extract or EZ-Sweetz
  • 1 1/2 T almond flour
  • 1 tsp. coconut flour
  • 1 T whey protein powder (I recommend Jay Robb's brand)
  • 1/8 tsp. xanthan gum
  • 4 T sugar free mini chocolate chips


  1. Heat greased skillet to medium heat.
  2. In a medium bowl or immersion blender cup, combine eggs, cream cheese, vanilla, baking powder, and stevia. Use the immersion blender to make a thin, smooth batter.
  3. In a small bowl, combine almond flour, coconut flour, whey protein, and xanthan gum. Mix well, then add to the thin batter. Use the immersion blender once again until the batter is smooth and thicker. An immersion blender is VERY IMPORTANT. There are no substitutes.
  4. Stir in chocolate chips.
  5. Pour about 1/4 cup of the batter into the hot skillet, cooking and then flipping the pancake. When you pour the batter, you may need to use a spoon to evenly distribute the chocolate chips, since they tend to sink to the bottom.
  6. Top finished pancakes with butter and sugar free syrup, if desired.
