This easy dessert is single serve and ahhhhhmazing. I’ve made cannoli before and it turned out great, but I wanted something super quick that would satisfy my raging sweet tooth!

This mousse is super creamy low carb goodness. It’s ready in just a minute or two and man oh man is it the perfect dessert! The cool cream really is the spitting image of what comes in a traditional Italian cannoli: complete with the miniature chocolate chips!

Makes 1 serving. 4.5g net carbs per serving.
Ingredients
- 1/4 C heavy cream, whipped until stiff peaks form
- 5-10 drops of EZ-Sweetz (to taste)
- 1/8 tsp. salt
- Pinch of nutmeg (optional)
- 1/8 tsp. almond extract
- 1 Tsugar free vanilla Davinci syrup (or 1/8 tsp. vanilla extract; use more sweetener if using extract)
- Pinch (very small) of xanthan gum
- 2 T sugar free mini chocolate chips
Instructions
- Place ricotta cheese into medium bowl and stir.
- Whisk in sweetener, salt, almond extract, nutmeg, vanilla and xanthan gum. Mix very well until mixture is smooth.Fold in whipped cream carefully until mixture is light and fluffy and equally mixed.
- Top with sugar free chocolate chips. Enjoy!
